Baking has always been one of my favorite hobbies, and there’s just something about this time of year that makes cozying up in the kitchen over delicious recipes that much more appealing. I have such fond memories of cooking with my mom while I was growing up, so when I was home for a brief visit last weekend, I suggested we combine forces in the kitchen for old times’ sake. She’s the true master, but I like to believe that some of her talent has rubbed off on me over the years. She suggested a recipe from Barefoot Contessa called, “Easy Cranberry & Apple Cake.” I naturally hopped on board the second I heard “cake.” Plus, I loved the idea of baking with cranberries and apples since they’re so fitting during the holiday season. The results were extremely tasty; so tasty, in fact, that I had a slice for breakfast with my cup of coffee the next morning. In my defense, it was Halloween morning, a day dedicated to indulging in all things sweet.
*This recipe is tart, but can be adapted using 3/4 of the cranberries (8 oz.), 1-1/2 apples, and extra white sugar in the fruit mixture.
