Greek Vegetarian Pita

This recipe isn’t particularly groundbreaking, but I often find that the simpler the recipe, the more I like it – as is the case with this Greek vegetarian pita. It’s virtually effortless and requires only a few simple ingredients, but I find the combination to be a match made in heaven. I gathered most of what I needed at our local farmers’ market this past weekend and picked up the remaining ingredients at the grocery store. Plus, with the Tzatziki sauce already made and the rest of the ingredients on hand, it was so quick to assemble a fresh, delicious sandwich every night of the week, so that’s exactly what I did.

Tzatziki Sauce Ingredients

1-1/2 cups plain Greek yogurt
2 tablespoons of lemon juice
2 tablespoons finely chopped fresh dill
1 tablespoon olive oil
Salt and pepper, to taste

Pita Ingredients

6 pack pita bread
3 small cucumbers, diced (I prefer Persian cucumbers)
3 tomatoes, diced
8 oz feta cheese
1 cup alfalfa sprouts

Directions

In a medium bowl, combine Greek yogurt, lemon juice, olive oil and dill. Stir until well combined. Taste and season with salt and pepper and chill before serving. Next, in a medium bowl combine feta, tomatoes, cucumbers and sprouts. Once mixed, spoon the mixture into each pita pocket and drizzle each with about 1 tablespoon of Tzatziki sauce.
