Tea Sandwiches

When it comes to my eating habits, I’m definitely a grazer. This isn’t to say I don’t indulge in heavy meals, but between bigger meals I’m going from cupboard to fridge, alternating from sweet to salty, and everything in between. Since I like having options that can satisfy multiple cravings, I love the idea of homemade tea sandwiches. Not only are the possible combinations endless, but they’re easy enough to be made in a matter of minutes. Here’s how I made these:


1 Loaf of white bread

Avocado Mash With Lemon
1 Avocado
1 Lemon
1 Tomato
Alfalfa Sprouts

Smoked Salmon With Dill & Cream Cheese 
Cream cheese
Smoked salmon

Cucumber Cream Cheese
Cream cheese
1/2 Cucumber (peeled and thinly sliced)

Egg Salad
2 Eggs
Mayonnaise to taste
Salt & pepper to taste
Alfalfa sprouts


Slice 4 pieces of bread on the diagonal, creating 8 triangle shaped slices (I kept the crust on to maximize the surface area for toppings, but for more traditional tea sandwiches, crust can be eliminated). For the Avocado Mashed With Lemon, cut avocado in half and remove pit. Mash avocado with a fork, squeeze half a lemon over the avocado and mix. Add salt and freshly ground pepper to taste. Spread avocado onto bread slice and top with alfalfa sprouts and a slice of tomato. For the Egg Salad, boil two eggs in water to cover for 10 minutes. Let eggs cool and remove the shell. Using an egg slicer, slice the egg in both directions to create finely chopped pieces. Mix in mayonnaise, salt and freshly ground pepper to taste. Spread egg salad over bread slices and top with alfalfa sprouts.
