I always assumed that as I got older I’d outgrow the days of ordering indulgent dishes for breakfast (or really any meal for that matter). But it turns out my sweet tooth is prominent as ever, and so is my lack of discipline. I’m coming to terms with the fact that I may never mature into the girl who “craves” salads, but since I’m a relatively healthy eater during the week, I cut myself some slack once the weekend rolls around, especially since brunch is one of my favorite ways to celebrate the days off. I typically alternate between cereal and oatmeal for breakfast at home, but since that routine can quickly turn bland, lately I’ve been spicing things up with other guilt-free alternatives. This Vanilla Chia Seed Pudding is one of my recent favorites (no surprise there with “pudding” as part of the title), but it’s actually packed with healthy ingredients, meaning that even though it’s technically a breakfast recipe, the flavor is sweet enough to double as a healthy option for my dessert cravings.
